Cossu Fusion Restaurant, Bar & Lounge in San Francisco, California

Owners Zouhair and Jennifer Senhaji met in Morocco and immediately fell in love. After finding they shared an ambition to one day run their own business they called upon Zouhair's brother Hicham to see if he was interested in running his own kitchen. Hicham knew that Pasha Restaurant was on the market and they jumped at a chance to revitalize the place. Zouhair and Jennifer purchased Pasha and after only five short months as new owners they suffered a huge blow. A tragic fire at a neighboring business closed them down for six months while they were forced to renovate. During the closure, the three decided to overhaul the menu, creating a more modern selection of dishes. They would still keep the traditional Couscous (a Moroccan staple), but decided to renovate the menu while the interior was being completed. Finally, they also decided it was time to revitalize the image as well, to reflect the new ownership, interior and menu and came up with Cossu.

Zouhair and Jennifer have the good fortune to have Executive Chef Hicham Senhaji, as their greatest asset. Hicham, who studied cooking in Morocco while in the Navy, started his career at the Sheraton Hotel in Casablanca. Once in San Francisco, he joined Jennifer at a small restaurant she was managing to get a feel for American kitchens. Chef Hicham then took a position with the Palace Hotel and then the Fairmont, where he had the pleasure of preparing brunch for former President Bill Clinton. Now he is heading up his own kitchen creating dishes that bring together his native Moroccan Cuisine with the Asian and American flavors he came to love here. The menu is a Fusion of all of these along with the classic French techniques he learned in culinary school. Executive Chef Hicham Senhaji is sure to be the next rising star in San Francisco.

Cossu (French for Plush), located at 1516 Broadway (at Polk) in San Francisco opened June 13, 2008. Cossu is a modern dinner destination with a "Cossu" new interior. Designer Mark Morris along with Golden Gate Interiors combined the look of a beautiful Moroccan tented oasis and a modern dinner lounge. Along with the reworked bar & new lighting installation by Rick Brown, Cossu is just the place to be seen in this affluent city by the bay.
